Parsley Rice

Parsley can be used as a herb, a spice or a vegetable. It has it's own unique flavour and taste. It has many health benefits because of its healing properties. So, I tried raw and  in salads with lemon but did not like it much so cooked it with rice and what a yummy dish it came out to be!

Ingredients
Raw Rice  1 cup
Onion chopped  1
Parsley chopped  2 cups
Ginger garlic paste  1 tsp
Green chillies chopped  4
Bell pepper/Capsicum chopped  (Optional) 1
Carrot chopped (Optional) 1
Water  1 &1/4 cup
Salt to taste
Lemon juice  1 tsp
Oil  2 tsps






In a long bottom pan or a cooker, heat oil and fry onion till transparent.












Add ginger garlic paste and green chillies.











Add the veggies and fry for a minute.












Add chopped parsley and give a stir.













Add salt and lemon juice and mix well.











Add water and bring it to boil.










Add Rice, give it a mix and close the lid of the pressure cooker. Take it out of the flame after 1 whistle.

If you are not using a pressure cooker, cook till the rice is soft and cooked.

Serve this yummy and aromatic rice hot.





  • Don't use jasmine rice since it changes the aroma completely.
  • I have not used garam masala or any other masala since it does not go well with the aroma of parsley.
